Fun with Rhizopus mold!

I was recently reading about Rhizopus oligosporus, the mold that is used to make tempeh, and it got me thinking. I wonder if tempeh can be made from grains? Sure enough, there was a research team in Sweden that made a tempeh from barley and oats. If you would like to read an article about that study, click here. Very interesting! Partly, for me, I don’t especially care for soy products (based on multiple reasons) so I would love to try this! Hmmmm… quinoa tempeh? I found a website called tempeh.info that offers a free sample of tempeh starter and I figured I would give it a shot. If you would like, get some yourself and tell me how your experiments go.
